- 2 sprigs Dill (chopped)
- 2 Tbsps olive oil
- ⅞ cup double cream
- 2 Tbsps Salmon roe
- 1 Avocado
- 4 Tbsps lemon juice
- ⅞ cup lobsters (or langoustine pâté)
- 30 white Bread

Preparation steps
1.
Combine the fromage frais with the chopped dill, olive oil, salt and pepper in a mixing bow, stirring thoroughly. Chill.
2.
Whip the cream to soft peaks in a bowl, and then fold in the salmon roe and a little salt and pepper to taste.
3.
Peel the avocado, remove the stone, and mash the flesh with the lemon juice, salt, and pepper in a bowl.
4.
Prepare little canapés by garnishing the rounds of sliced bread with each of the four spreads; the lobster pate, the fromage frais, the salmon roe cream, and the avocado puree.
5.
Stack the canapés in layers with one of each of the 4 different flavours. Serve immediately.
