Ingredients

For the salmon
2 Tbsps Canola oil
4 Salmon (eqch about 180 grams)
salt
freshly ground peppers
For the salsa
2 ripe Avocados
1 Cucumber
2 Red paprika
1 can Corn (about 250 grams)
125 grams Feta
½ bunch parsley
5 Tbsps olive oil
1 lemon (juiced)

Preparation steps

1.

For the salsa: rinse bell peppers and halve, remove seeds and ribs and cut into 0.5 cm (approximately 1/5 inch) pieces. Peel cucumber and dice small. Halve avocados and pit. Press out pulp and dice small. Rinse and shake dry parsley, pluck off leaves and chop coarsely.

Drain corn. Cut feta cheese into cubes and combine with all the vegetables. Whisk lemon juice with olive oil, season with salt and pepper and fold into salsa.

For the salmon: rinse salmon fillets, pat dry and season with salt and pepper.

Heat 2 tablespoons of oil in a pan and cook salmon, skin side down first, for 3-4 minutes per side or until golden brown.  

5.

Remove salmon from pan. Arrange salmon and salsa on plates and serve.
