Preparation steps
1.
Rinse the arugula and radicchio and shake dry.
2.
For the dressing, purée the parsley leaves with the lemon juice and olive oil, season with salt and pepper and stir in the lemon zest.
3.
To serve, mix the arugula and the radicchio with the dressing, transfer to plates and serve showered with planed Parmesan.
