- ½ Frisée
- ½ Batavia lettuce
- 250 grams Strawberries
- 1 ripe Avocado
- 4 Tbsps Lime juice
- 60 grams candied, chopped ginger
- 100 grams Natural yogurt
- 2 Tbsps Crème fraiche
- 1 pinch sugar
- 2 tsps grainy Mustard
- salt
- peppers
- 200 grams crayfish (cooked and peeled)

Preparation steps
1.
Rinse the frisée and batavia lettuce, spin dry and cut into bite-size pieces. Rinse the strawberries, pat dry and cut into quarters.
2.
Halve the avocado, remove core, and remove the flesh from the rind. Cut into slices and sprinkle with 1 tablespoon of lime juice.
3.
For the dressing, mix the ginger, yogurt, crème fraîche, sugar, mustard and 3 tablespoons of lime juice. Season with salt and pepper.
4.
Mix the lettuce with strawberries, avocado and crayfish. Arrange on plates and add dressing. Serve immediately.
