- 2 Tbsps Oil
- 4 bone-in, skin-on chicken joint
- ⅛ cup all-purpose flour
- salt
- peppers
- 1 onion (finely chopped)
- 4 rashers Bacon (rind removed, chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 large potatoes (diced)
- 2 large carrots (chopped)
- 4 ½ ozs Pearl barley
- 3 cups chicken stock
- 2 Tbsps Dijon mustard
- To garnish
- 1 Tbsp chopped parsley

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Heat the oil in a large frying pan. Toss the chicken in the flour with some seasoning, then brown for 4 minutes until golden. Remove from the pan and set aside.
3.
Add the onion, bacon, garlic, potatoes and carrots to the pan, and cook for a few minutes, stirring.
4.
Stir in the barley, stock and mustard, then return the chicken to the pan and stir to combine.
5.
Put into a casserole or baking dish and cook for 45-55 minutes, until the chicken and vegetables are tender.
6.
Put onto warmed serving plates and garnish with parsley.
