- 1 chicken (1,2 kg)
- 500 grams shallots
- 2 garlic cloves
- 2 sprigs rosemary
- 2 stems parsley
- 6 Tbsps olive oil
- salt
- freshly ground peppers
- 150 milliliters dry white wine
- 1 tsp ground paprika
- 1 Tbsp freshly chopped parsley

Preheat the oven to 180 ° C convection.

Rinse chicken and pat dry. Peel shallots and garlic and place into a roasting pan with all the herbs. Drizzle with 2 tablespoons of oil and season with salt and pepper. Season chicken inside and out with salt and pepper, brush with 2 tablespoons of oil and place on top of vegetables. Add wine and bake chicken in preheated oven at 180°C (approximately 350°F) for about 1 hour. Add a little water, if necessary. Baste chicken with resultung juices from time to time. Mix paprika with remaining oil and brush chicken with the mixture during the last 10 minutes of baking. If necessary, slightly increase temperature to brown chicken nicely. Sprinkle with chopped parsley and serve.
