- 300 grams Roast beef
- 1 bunch Arugula
- 1 shallot
- 2 Tbsps Wine vinegar
- 4 Tbsps Beef broth
- 6 Tbsps olive oil
- 80 grams Parmesan

Preparation steps
1.
Peel and finely chop shallots, then whisk together with vinegar, oil, broth, salt and pepper. Rinse and spin dry the arugula, tear into pieces and toss with the vinaigrette.
2.
Arrange roast beef slices on serving plates and place the dressed salad on top. Shave or slice the Parmesan and sprinkle on top. Serve immediately.
