250 grams Wild rice
200 grams Cherry tomatoes
1 onion
2 cans white Tuna (each about 150 grams)
100 grams Olives
3 Tbsps lemon juice
1 Tbsp White vinegar
salt
freshly ground peppers
4 Tbsps olive oil
2 Tbsps Lemon balm
Lemon balm (for garnishing)

Preparation steps

1.

Combine rice with 500 ml (approximately 2 cups) of water and bring to a boil, simmer for about 35-40 minutes. Drain and let cool. 

2.

Rinse tomatoes and cut into wedges. Peel onion and cut into small cubes.

3.

Drain tuna and cut into small pieces.

4.

Whisk lemon juice with vinegar and oil, season with salt and pepper. 

5.

Combine rice with tomatoes, onion, tuna, olives and chopped lemon balm leaves, toss with the salad dressing. Garnish with lemon balm leaves and serve.
