- 4 Rice paper
- 1 small Lettuce
- 2 carrots
- 4 dried Wood Ear Mushrooms
- 1 paprika
- 1 bunch Chives
- 1 Tbsp White vinegar
- soybean sprout
- 3 Tbsps Salad oil
- salt
- freshly ground peppers

Preparation steps
1.
Lay the rice paper between damp kitchen towels to soften.

Peel the carrots and cut into thin strips.
3.
Separate and rinse the lettuce, then spin dry. Soak the mushrooms in lukewarm water for 10-20 minutes. Drain, pat dry and chop. Rinse the paprika, cut in half, remove the seeds and cut into thin strips. Stir together the vinegar and oil and season with salt and pepper.
4.
Distribute 1-2 lettuce leaves on each rice paper sheet. Cover with a few carrots, mushrooms and strips of pepper, drizzle with the dressing and gently roll up. Cut each roll in half diagonally. Arrange standing on plates and garnish with sprouts and chives in small bundles.
