- 1 ½ cups Basmati rice
- 2 ⅔ cups Beef (e. g. rump or sirloin; cut into bite-sized pieces)
- ½ tsp peppercorns (ground in a mortar)
- ½ tsp Coriander (ground in a mortar)
- 1 red chili pepper (finely chopped)
- ¾ inch fresh ginger (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 Tbsps vegetable oil
- 4 scallions (sliced on the diagonal)
- 2 cups Snap pea
- 1 Tbsp soy sauce
- 1 Tbsp Fish sauce

Preparation steps
1.
Add the rice to twice the quantity of slightly salted water, cover, bring to the boil and simmer over a low heat for around 20 minutes.
2.
Sear the meat with the peppercorns, coriander, chilli, ginger and garlic in hot oil for 2-3 minutes.
3.
Add the spring onions and sugar snap peas and fry for 2-3 minutes until cooked, adding a little water if necessary. Season to taste with soy sauce and fish sauce.
4.
Serve in bowls arranged on top of the rice.
