Beef (e. g. rump or sirloin; cut into bite-sized pieces)
½ teaspoon
Peppercorn (ground in a mortar)
½ teaspoon
Coriander seed (ground in a mortar)

red chile pepper (finely chopped)
¾ inch
fresh Ginger root (finely chopped)
2 cloves
garlic (finely chopped)
2 tablespoons

scallions (sliced on the diagonal)

Preparation steps

1.
Add the rice to twice the quantity of slightly salted water, cover, bring to the boil and simmer over a low heat for around 20 minutes.
2.
Sear the meat with the peppercorns, coriander, chilli, ginger and garlic in hot oil for 2-3 minutes.
3.
Add the spring onions and sugar snap peas and fry for 2-3 minutes until cooked, adding a little water if necessary. Season to taste with soy sauce and fish sauce.
4.
Serve in bowls arranged on top of the rice.
