- 4 Tbsps Oil
- 4 Red snapper fillet
- fresh ginger (peeled and grated)
- 1 red chili pepper (deseeded and finely chopped)
- 2 Tbsps butter
- 1 small Leek (sliced diagonally)
- 1 ⅓ cups Pineapple (fresh or tinned)
- Lime juice (from 1 lime)
- 2 Tbsps soy sauce
- 2 Tbsps dry sherry
- 1 tsp honey
- Chives (to garnish)

Preparation steps
1.
Heat 2 tbsp oil in a wide pan and fry the fish fillets for about 3 minutes on each side or until just cooked. Remove from the pan, set aside and keep warm.

Add the remaining oil to the pan and gently fry the ginger and chilli for 2 minutes. Add the butter, sweat the leeks for 2 minutes then add the pineapple.
3.
Pour over the lime juice, soy sauce and sherry, cook for 4 minutes then stir in the honey. Season with salt and pepper.
4.
To serve, arrange the leek and pineapple mixture onto serving plates, top with the sliced fish fillets and garnish with chopped chives.
