24 King prawn (ready to cook, deveined and peeled down to the tail segment)
1 shallot
1 garlic clove
3 Tbsps vegetable oil
1 Tbsp red Curry paste
200 milliliters fish stock
200 milliliters Coconut milk
Fish sauce
salt
freshly ground peppers

Preparation steps

Rinse the shrimp and pat dry. Peel the shallot and garlic and finely chop. Quickly sauté the shrimp in 2 tablespoons hot oil. Transfer the shrimp to a plate and sauté the shallot and garlic in the remaining oil.

Stir the curry paste into the onion mixture. Add the stock and the coconut milk. Let simmer gently until creamy, about 10 minutes. Return the shrimp to the pan and simmer until warmed through.  Season with fish sauce, salt and pepper to taste and serve immediately.
