- 100 grams Plum (or red plums)
- 500 grams red onions
- 2 Tbsps sunflower oil
- 1 Tbsp honey
- 250 milliliters dry Red wine
- 75 milliliters white balsamic vinegar
- 1 tsp peppercorns
- 1 generous pinch Ground clove
- 1 generous pinch allspice
- 1 tsp chopped oregano
- 2 bay leaves
- salt
- freshly ground peppers

Preparation steps

Rinse and halve the plums. Remove the stones and thinly slices. Peel and julienne the onions, and sauté in the oil for 1-2 minutes. Add the plums, honey, red wine, vinegar, peppercorns, cloves, allspice, oregano, and bay leaf. Simmer over low heat for 45 minutes, stirring occasionally. If necessary, add some water.

Season to taste with salt, pepper, and vinegar. Transfer into the prepared jars, seal tightly, and cool completely.
