4 Red mullet fillets (each 160 grams)
4 Beefsteak tomato
2 shallots
1 garlic clove
1 Tbsp butter
1 Tbsp Tomato paste
½ tsp sugar
salt
freshly ground peppers
½ bunch Basil (leaves)
2 Tbsps lemon juice
2 Tbsps Corn oil
3 Tbsps Pastry flour

Preparation steps

1.

Blanch tomatoes for a few seconds, rinse, peel, remove seeds and cut the flesh into small cubes.

Peel shallots and garlic and chop finely.

3.

Heat butter in a pan, sauté shallots and garlic briefly, then stir in tomato paste and sugar. Add tomatoes and simmer over low heat for about 7 minutes. Season with salt and pepper.

Cut the basil into strips and mix with the tomatoes.

5.

Season the red mullet fillets with salt and pepper and sprinkle with lemon juice. Place flour on a plate, turn fish fillets in the flour, then fry in hot oil on each side for about 1 minute.

6.

Spread the tomato sauce on warmed plates, place red mullet fillets on the sauce and serve with baguette slices, if desired.
