- 200 grams red Lentils
- 1 onion
- 3 Tbsps olive oil
- 300 milliliters Orange juice
- 300 milliliters Carrot juice
- 1 tsp instant Vegetable broth
- salt
- freshly ground peppers
- 2 pinches Cumin (ground)
- 2 generous pinches Curry powder
- 50 milliliters Whipped cream
- cilantro (for garnish)

Preparation steps

Rinse the lentils in a colander. Peel the onion and chop. Heat the olive oil in a saucepan and cook the onions until soft. Add the lentils and pour in the orange and carrot juices. Season with the vegetable stock, salt, pepper, cumin and curry.

Bring to a boil, cover and cook at a low temperature, about 25 minutes. Stir frequently. Take 4 tablespoons of the lentils from the pot and puree the remaining soup with a blender. Add the cream and bring to a boil again.
3.
Serve the soup in deep plates and top with the remaining lentils. Garnish with fresh cilantro.
