- 100 grams Red Lentils
- 4 scallions
- 1 Apple
- 80 grams Walnut (coarsely chopped)
- 3 Tbsps Orange juice
- 3 Tbsps Lime juice
- 3 Tbsps Walnut oil
- salt
- peppers (freshly ground)

Preparation steps
1.
In a pot, simmer lentils with about 300 ml (approximately 1 1/4 cup) water, 10-15 minutes. Drain, rinse and let drain.
2.
Rinse, trim and thinly slice scallions crosswise into rings. Rinse, quarter, core and cut apple into slices. Mix apples with scallions, lentils and walnuts in a bowl.
3.
To make dressing: Whisk orange and lime juices with walnut oil and season with salt and pepper. Pour dressing over salad and mix well. To serve, divide salad among small bowls.
