Ravioli with Chanterelles and Bacon
Trim the chanterelles, and cut into quarters or halves as needed. Heat oil and butter in a pan and fry the onion until soft, add the chanterelles and cook over low heat, while stirring. Add the ham and season with salt and pepper.
Cook the ravioli according to package directions in boiling salted water, drain and add to the chanterelles in the pan. Sprinkle with parsley.
Remove the pan from heat, crumble the ricotta over the ravioli and mix quickly. Spoon the ravioli into a bowl and serve immediately.
