- 1 handful young Birch leaf
- 2 Tbsps parsley (chopped)
- 200 grams Yogurt (0.1% fat) (lean)
- 50 milliliters Whipped cream
- 2 Tbsps lemon juice
- salt
- peppers (White)

Preparation steps
1.
Trim the radishes, rinse and cut into slices. Cut the scallions into long, bite-sized pieces, blanch briefly. Rinse the birch leaves, pluck and shake dry. Mix everything with the parsley in a bowl, season with salt, distribute over 3 bowls.
2.
Mix the yogurt with the cream and the lemon juice, season with salt and pepper to taste, dollop over the dish and serve immediately.
