- 4 Goat cheese (about 60 grams)
- 1 pomegranate
- 1 organic Orange
- 2 Tbsps honey
- 1 tsp rosemary (finely chopped)
- 4 Tbsps olive oil
- 2 Tbsps lemon juice
- ½ bunch mint
- ½ bunch Basil
- Sea salt
- freshly ground peppers
Preparation
1.
Rinse radicchio leaves, pat dry and arrange on plates.

Halve pomegranate and remove seeds.
3.
Finely grate orange zest, then squeeze juice from orange. Mix zest and juice with honey, lemon juice, rosemary and oil. Season with salt and pepper.
4.
Crumble cheese over radicchio, sprinkle with mint and basil leaves and drizzle with dressing. Serve salad sprinkled with pomegranate seeds.
