1 Red onion (thinly sliced)
3 boneless, skinless Chicken breasts (halves)
For Sauce
1 cup Ketchup
2 Tbsps apple cider vinegar
2 Tbsps Molasses
1 Tbsp grainy Mustard
freshly ground Black pepper (to taste)
1 tsp Onion powder
1 pinch ground Cumin
½ tsp garlic powder
½ tsp Tabasco sauce
salt (to taste)
In addition
Lettuce (rinsed and dried)
4 gourmet Burger buns (split and toasted or grilled)

Preparation steps

1.
Rinse the chicken under cold running water and pat dry with paper towels. Trim any excess fat from the chicken and place in the crock pot.
2.
Mix all of the sauce ingredients together and pour on top of the chicken covering completely, making sure some of the sauce gets under the chicken.
3.
Cook for 6 hours or longer on low setting. The sauce thickens during the slow cooking process. Once the chicken is falling apart tender, take two forks and shred the chicken.
4.
Serve with lettuce and red onions on top of toasted split buns.
