- 3 Tbsps Oil
- 2 onions (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 Leeks (finely sliced)
- 3 sticks Celery (finely sliced)
- 3 carrots (sliced)
- 8 cups chicken stock
- 2 Tbsps Bouillon (powder)
- 4 skinless, boneless Chicken breasts (roughly chopped)
- salt
- peppers
- 2 Tbsps chopped parsley

Preparation steps
1.
Heat the oil in a large pan and cook the onions, garlic, leeks, celery and carrots slowly for about 10-15 minutes, until soft but not browned.
2.
Add the chicken stock and bouillon powder and bring to a boil. Reduce the heat and simmer gently for 20 minutes.
3.
Add the chicken and cook for a further 10 minutes until the chicken is cooked through. Season to taste with salt and pepper.
4.
Stir in the chopped parsley and serve immediately.
