- 120 grams Puff pastry dough
- 150 grams Raspberries
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 4 slices Goat cheese from a roll (each about 60 grams)
Preparation

Preheat oven to 220°C (approximately 425°F).

Cut out 4 circles from puff pastry measuring about 8 cm (approximately 3 inches) in diameter. Place on a baking sheet lined with parchment paper. Prick several times with a fork and bake for 15 minutes or until golden brown.

Rinse and trim raspberries. Gently mix with lemon juice and honey.

Remove puff pastry circles from oven. Cover with goat cheese and top with raspberries. Turn on broiler and broil, watching carefully, for about 5 minutes. Serve immediately.
