- 7 ozs cooked, peeled Prawn
- 3 Tbsps extra virgin olive oil
- 2 Tbsps Lime juice
- 4 Tbsps coarsely chopped parsley
- salt
- peppers
- 3 little gem Lettuce
- To garnish
- 1 small, red Bell pepper (diced)
- 1 Lime (grated zest)
Preparation steps
1.
Toss the prawns in a bowl with the olive oil, lime juice, parsley and a little salt and pepper.
2.
Lay the lettuce leaves on serving plates, cup-side up. Put the prawns into the lettuce leaves.
3.
Scatter over the red pepper and lime zest to garnish.
