200 grams waxy potatoes
1 green Bell pepper
70 grams streaky, smoked Bacon
½ onion
1 Tbsp chopped parsley
3 Tbsps olive oil
salt
peppers (freshly ground)
2 eggs
2 Tbsps Whipped cream
Lettuce (for serving)

Preparation steps

1.

Peel the potatoes and cut into 1 cm (approximately 1/2 inch) cubes. Peel the onion and cut into rings. Risne the peppers, cut in half, remove seeds, remove the white skin and cut into strips. Cut the bacon into strips.

Heat olive oil in a pan and fry the potatoes about 5 minutes. Add the onions, peppers and bacon and cook everything about 5 minutes. Continue to cook until the potatoes are tender, stirring occasionally. Season with salt and pepper.

Whisk the eggs with cream and parsley and season with salt and pepper. Add the eggs to the potato mixture. Reduce the heat and cook covered about 10-15 minutes on low heat.

4.

Cut into pieces and serve with salad.
