1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
1 onion
400 grams Pork tenderloin
salt
freshly ground peppers
4 Tbsps vegetable oil
1 lg can peeled Tomatoes (800 gram capacity)
2 cloves
1 tsp thyme
400 grams Pappardelle noodles

Preparation steps

1.

Rinse, trim and finely chop the soup vegetables. Peel onion and dice.

Season the pork with salt and pepper. Sear on both sides in a pan with 2 tablespoons oil, then reduce heat and cook over low heat about 20 minutes. Remove from pan, wrap in foil and allow to rest for about 5 minutes.

Fry onion and vegetable cubes in remaining oil for about 5 minutes. Add tomatoes with their juice, mash slightly, then add cloves and thyme. Season with salt and pepper and simmer for 15 minutes.

4.

Cook pappardelle in plenty of boiling salted water until al dente. Cut pork into slices and add to the sauce. Arrange everything on plates and serve.
