Preparation steps

1.
Heat the oven to 220ºC (200º fan) 425ºF, gas 7.
2.
Score the skin of the pork in a criss-cross pattern and rub generously with olive oil, salt and pepper.
3.
Place the pork in a roasting tin and roast in the oven for 15 minutes. Turn the heat down to 180ºC (160º fan) 350ºF, gas 4 and continue roasting for another 1 hour 15 minutes or until the crackling is crispy and the pork is cooked through.

Let the meat rest in a warm place for 10 minutes before serving.
