800 grams lean Pork
1 Tbsp ground cilantro
1 Tbsp ground Caraway
1 Tbsp ground cloves
1 Tbsp Ground cinnamon
1 Tbsp Anise seed
1 Tbsp peppers
5 Tbsps White vinegar
2 Tbsps vegetable oil
4 onions
1 pc fresh ginger (about 3 cm)
4 garlic cloves
¾ l Broth
1 Tbsp Tomato paste
2 Tbsps Ketchup
1 Tbsp Sambal oelek
salt
2 bay leaves
fresh cilantro

Preparation steps

Mix spices with the vinegar. Rinse meat, pat dry, cut into cubes and coat with the marinade. Allow to marinate for 1 hour. Peel the onions and dice. Peel ginger and garlic and chop very finely. Heat oil in a pot and brown the meat while turning over hight heat. Add garlic, onions and ginger and sauté briefly. Add meat and pour in broth. Stir in tomato paste, ketchup, sambal oelek, bay leaves and a pinch of salt to taste.

Simmer curry, covered, over low heat about 40 minutes. Garnish with cilantro leaves.
