Preparation steps

1.

Peel the onion and cut into rings. Add onion to a pan with 1-2 tablespoons of oil and cook until browned, then reduce the heat and continue to cook until soft, about 5 minutes. Season with a little salt and remove from the pan. Cut avocado cut in half, remove pit, remove shell and cut the flesh into slices. Drizzle with a little lime juice. Rinse the tomatoes, remove the stems and seeds and dice into small cubes. Stir mayonnaise together with the curry powder and tomato paste and season with red pepper flakes.

2.

Combine pork with the mustard, season with salt and pepper and knead until smooth. Shape into 4 patties. Cook in hot oil on 1 side for 4-5 minutes. Then turn over patties and top with cheese slices. Cook on second side about 4 minutes.

3.

Slice the rolls, spread with the mayonnaise and top with patties. Cover with onion, tomatoes and avocado and garnish with cilantro leaves.
