Preparation

Add 1 tablespoon of to a cup. Break the egg into the cup, and swirl until coated. Bring 1 liter (approximately 1 quart) of water and the remaining vinegar to a boil in a small saucepan. Turn off the stove. When the boils slightly, stir with a wooden spoon to create a vortex. Slide the egg into the saucepan, and stir gently so that the egg white surrounds the yolk.

Poach the egg for 4 minutes, until the egg white is firm but the yolk is still soft. Carefully lift the egg from the water with a skimmer and rinse briefly.

If necessary, remove the excess egg whites from the eggs with scissors. Season with a little salt. Serve immediately, or use in a recipe of your choice.
