- 2 Bell pepper (red and green)
- 2 green chili peppers
- 2 onions
- 1 handful cilantro
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- ½ lemon (juiced)

Preparation

Blanch the tomatoes, peel, cut into quarters, remove the seeds and dice. Rinse the bell pepper and chile peppers, remove the ribs and seeds and dice. Peel and dice the onions. Rinse the cilantro, pat dry and coarsely chop.

Toss the chopped tomatoes, peppers, onions and cilantro with the olive oil, white wine vinegar and lemon juice. Season with salt and pepper. Let stand for about 10 minutes before serving.
