- 1 ⅛ cups Pearl barley
- 4 cups Meat stock
- 3 ⅓ cups Pork belly sliced (raw smoked, if desired)
- 1 ¼ cups canned Sauerkraut (drained)
- 1 bay leaf
- 2 Tbsps parsley (very finely chopped)

Preparation steps
1.
Soak the barley in water overnight.

Place the stock in a pot and bring to the boil. Drain the barley and add to the stock along with the meat. Half-cover with a lid and simmer for around 45 minutes.
3.
Add the sauerkraut and the bay leaf after 30 minutes. Toward the end of the cooking time, remove the meat from the soup and chop. Remove the bay leaf and add the parsley. Return the meat to the soup and serve seasoned with salt and ground black pepper.
