- 1 cup quinoa flour
- 1 cup all-purpose flour
- 1 Tbsp Baking powder
- ¼ tsp ground Nutmeg
- 1 tsp ground ginger
- 1 tsp salt
- ½ cup brown sugar (plus extra for topping)
- ¼ cup granulated sugar
- 2 fresh eggs
- ¼ cup Canola oil
- 1 tsp pure vanilla extract
- 1 cup Whole milk
- 2 tsps fresh lemon zest
- 1 cup fresh Pear (cut into 1/4-inch slices)

Preparation steps
1.
Preheat the oven to 400º F. Line a standard muffin tin with paper or foil liners.

In a large bowl, combine the flours, baking powder, spices and salt. In a separate smaller bowl, lightly beat the eggs; stir in the sugars, oil, vanilla and milk. Pour mixture into the dry ingredients, stirring just until combined. Then fold in the zest and pear slices.
3.
Spoon the batter into the prepared muffin tin. Sprinkle the top of each muffin lightly with brown sugar. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean.
4.
Cool on a wire rack and serve.
