1 Rinse peach, then plunge briefly into a pot of boiling water. Rinse with cold water and peel off skin. Halve, remove pit and chop.
2 In a tall vessel, combine peach, yogurt and coconut milk. Puree until smooth with an immersion blender.
3 Pour into a glass and top with mineral water. Add ice cubes and served sprinkled with saffron.
