1 tsp butter
750 milliliters clear Vegetable broth
300 grams Frozen pea
200 grams Whipped cream
150 grams Crème fraiche
salt
freshly ground peppers
Nutmeg
1 Tbsp cornstarch

Preparation steps

Peel shallots and chop. Melt butter in a pan, saute shallots until translucent, then pour in broth and bring to a boil. Mix cornstarch with a little water until smooth, stir into broth and let thicken.

Add heavy cream, creme fraiche and peas, boil, reduce heat and simmer for 3 minutes. Puree soup with an immersion blender and season with salt, pepper and nutmeg. Serve in bowls garnished with pea pods.
