Preparation steps

Peel the potatoes, rinse and cook for 25-30 minutes in boiling salted water. Meanwhile rinse the mint, shake dry and pluck off the leaves. Rinse the peas, blanch in boiling water with a pinch of salt for about 4 minutes, drain and rinse. Mash half the peas finely with half the mint leaves in a blender.

Drain the finished potatoes, let evaporate, press through a potato ricer and mix with the warm milk, the butter and the pea puree to a smooth puree. Season with salt, pepper and nutmeg. Pour the mashed potatoes into preheated bowls and serve garnished with the remaining peas and mint leaves.
