Ingredients

For the pastry
1 cup all-purpose flour
¼ cup butter
1 Tbsp sugar
1 egg yolk (beaten)
1 Tbsp cream (18% fat)
For the filling
cup Apple juice
cup Red wine
4 Apple (peeled, cored and diced)
2 cups Blackberry
2 tsps ground cinnamon (optional)
2 Tbsps Corn starch
0.333 cup sugar
1 egg
1 egg white
caster sugar (for sprinkling)
To serve
Whipped cream

Preparation steps

1.
Put all the pastry ingredients into a bowl and work to a smooth dough using your hands. Wrap in cling film and chill for 30 minutes.

For the filling: put the juice into a pan with 150ml|2/3 cup wine and bring to a boil. Mix the remaining wine smoothly with the cornflour and sugar and stir into the boiling liquid.

Return to the boil briefly. Stir in the fruit and cinnamon and leave to cool.

Stir the egg and egg white into the fruit mixture.

Heat the oven to 200°C (180° fan) 400°F gas 6.

Spoon the filling into a large pie dish.
7.
Roll out the pastry to a circle to fit the top of the dish. Place on top of the filling, pressing the edges to seal. Bake for about 40 minutes until the pastry is golden and the fruit is tender.
8.
Sprinkle with sugar while the pie is hot and serve with whipped cream.
