Preparation steps

Rinse asparagus, trim, cut off woody ends and cook in boiling salted water with butter and sugar for about 10 minutes. Drain, cut off the tips and keep warm. Cut 5 shoots into small pieces and mash with 2 tablespoons of the cooking liquid. Pour the mixture with the cream into a pan and boil until slightly creamy. Season with salt and pepper.

Cook pasta in plenty of boiling salted water until al dente. Cut the salmon into small pieces. Coat a steamer with some butter. Put the pieces of fish on a matching pot filled 2 cm (approximately 3/4 inch) high with water and bring to a simmer. Steam the salmon about 5-6 minutes over the water. Mix pasta with salmon and sauce. Garnish with the asparagus tips. Serve sprinkled with parsley.
