Peel and finely chop the shallots. Finely dice the pumpkin.

Heat the butter in a skillet. Add the shallots and cook until translucent, about 3 minutes. Add the pumpkin cubes and cook for 5 minutes. Stir in the orange juice and vegetables broth, and cook over low heat for 15 minutes.

Cook the pasta in a pot of boiling salted water until al dente.

Season the pumpkin mixture with nutmeg, salt and pepper to taste, and remove from heat. Add the pasta and toss until thoroughly combined. Serve in bowls and garnish with the cheese.
