8 cups Cavatappi pasta
2 ½ cups milk (divided)
4 tablespoons flour
3 cups extra-sharp Cheddar cheese (shredded)
1 cup low-fat Cottage cheese
1 pinch ground Nutmeg
¼ teaspoon salt

0.767 cup frozen carrots (thawed)
3 slices cooked Bacon (chopped)

Preparation steps

Cook the pasta according to package instructions.

Meanwhile, heat 2 cups milk in a large heavy saucepan, set over medium-high heat until steaming but not boiling. In a small bowl, whisk remaining milk and flour until smooth; add to the hot milk and cook, stirring constantly, until the sauce simmers and thickens, about 3 minutes. Remove milk from heat source and add the Cheddar cheese, stirring until melted. Stir in the cottage cheese, nutmeg and salt.

Add the cooked pasta, peas and carrots, and bacon to the cheese sauce; mix well. Transfer to a serving bowl and serve hot.
