Pasta with Mushrooms, Lettuce and Parmesan Cheese

400 grams Casarecce pasta (alternatively, broken macaroni)
salt
400 grams fresh Cépe mushrooms
1 red onion
1 garlic clove
2 Tbsps olive oil (for cooking)
1 tsp freshly chopped thyme
1 tsp freshly chopped rosemary
freshly ground peppers
½ tsp Red pepper flakes
2 Lettuce
2 Tbsps white balsamic vinegar
4 Tbsps olive oil
40 grams Parmesan
rosemary (for garnishing)

Preparation
1.

Cook pasta in boiling salted water until al dente.

2.

Clean mushrooms, cut stems into small cubes, halve caps.

3.

Peel onion and garlic and cut into very small cubes.

4.

Hea oil in a pan, saute onion and garlic until translucent. Add mushrooms and herbs, saute until all liquid evaporates. Season with salt, pepper and chile flakes, remove from heat.

5.

Rinse and spin dry lettuce, tear into bite-sized pieces. 

6.

Drain pasta, cool slightly and combine with mushrooms and lettuce. Combine vinegar and oil, season with salt and pepper. Arrange pasta on plates, drizzle with dressing. Sprinkle with freshly grated parmesan, garnish with herbs and serve.
