Ingredients
Pasta Sauce with Salmon Caviar
- Ingredients
- 3 stalks Leeks
- 1 Tbsp olive oil
- 2 tsps Cultured butter
- salt
- 1 small garlic clove
- 2 Tbsps Anisette (or 1 pinch of ground anise)
- 5 ozs Chicken broth
- 5 ozs Soy creamer
- coarsely ground peppers
- 1 oz Salmon caviar
- For serving
- 12 ozs Pasta (such as conchiglie or other shells)
Quarter leeks lengthwise, rinse well and drain. Cut diagonally into small pieces.
Heat oil and butter in a pot. Add leeks and season lightly with salt. Cook over low heat for about 2 minutes.
Peel the garlic clove and squeeze through a garlic press into leeks. Season with anisette (or ground aniseed).
Pour broth and soy creamer over the leeks and let simmer, stirring occasionally, for 10 minutes over medium heat.
Season the sauce with salt and pepper, stir in half of the roe and serve with pasta. Garnish with remaining roe.

The leek is rich in sulphides (sulphur compounds), which act as gentle natural antibiotics and also help to lower high blood pressure and cholesterol levels. The caviar provides a portion of iodine and protein.
