4 scallions
400 grams Salmon

1 Tbsp lemon juice
2 Tbsps freshly chopped Fresh herbs (such as rosemary and mint)
1 lemon (for garnish)

Preparation steps

Cook pasta in a pot of boiling salted water according to package directions until al dente. Rinse with cold water and drain. Toss the pasta with 1 tablespoon oil.

Rinse the zucchini, halve lengthwise and cut into slices. Rinse scallions and thinly slice. Rinse the salmon, pat dry and cut into bite-size cubes. In a non-stick pan, heat the remaining oil and cook the salmon until golden brown for 2-3 minutes. Add the zucchini and scallions and season with salt, pepper and lemon juice. Let cool slightly, then add pasta and herbs. Season again and divide among bowls.

Peel lemon, cut off ends and then thinly slice lemon. Garnish the salad with the lemon slices and serve.
