- 1 tsp spicy Mustard
- 2 Tbsps Crème fraiche
- 3 ozs vegetable stock
- 5 Tbsps olive oil

- 2 Tbsps freshly grated Parmesan
Preparation
1.
Peel the garlic, and add to a blender with the vinegar, mustard, crème fraîche, stock, and the oil in a blender. Puree, and season with salt, pepper, and a pinch of sugar.

Fold in the parmesan, and adjust the seasoning if necessary. Serve with a fresh salad.
