Preheat oven to 200°C (approximately 400°F). Clean mushrooms and remove stems. Heat oil in a pan and sauté mushroom caps and stems on all sides. Season with salt and pepper. Remove mushrooms from pan and set aside.

Rinse thyme, parsley and rosemary and shake dry. Remove leaves or needles from stems and finely chop. Melt butter in a small pan and sauté herbs in butter and mix with breadcrumbs.

Place fried mushrooms in a greased, ovenproof pan. Sprinkle herbs and breadcrumbs over mushrooms and sprinkle with parmesan. Bake in preheated oven for 8-12 minutes, until cheese is golden brown. Remove from oven and serve immediately.
