- 80 grams freshly grated Parmesan
- vegetable oil (for bowls)
- 4 Tbsps Sour cream
- 4 tsps Caviar
- 4 tsps Salmon caviar
- Leeks (for garnish)

Preparation steps
1.
For each basket, scatter a pile of Parmesan in a coated, hot pan and melt 2-3 minutes to light golden brown. Remove pan from heat then immediately and carefully place the Parmesan circle swiftly on an oiled, inverted bowl so that a basket results. Allow to cool and carefully remove the bowl.
2.
Place 1 tablespoon each of sour cream, black caviar and red caviar into each basket. Serve garnished with chives.
