- 300 grams Tagliatelle
- salt
- 500 grams Golden turnip
- 1 Tbsp butter
- 100 milliliters Vegetable broth
- 100 milliliters Whipped cream
- peppers (freshly ground)
- 150 grams grated Scamorza (or mozzarella)
- 2 Tbsps freshly chopped parsley

Preparation steps

Cook the pasta in boiling salted water until al dente.

Peel the turnips and cut into strips. Heat the butter in a skillet. Add the turnips. Stir in the broth and cream, and season with salt and pepper to taste. Cover and simmer until the turnips are tender, about 10 minutes. Stir the scamorza into the turnip mixture. Season with salt and pepper to taste.

Drain the pappardelle, reserving some pasta water. Toss the pappardelle with the sauce and add some pasta water if necessary. Serve garnish with parsley and season with salt and pepper to taste.
