400 grams Pappardelle noodles

500 grams mixed Mushrooms (such as champignons, brown caps, boletus, or chanterelles)
1 garlic clove
1 shallot
2 Tbsps olive oil
peppers (freshly ground))
1 Tbsp freshly chopped parsley
3 Tbsps freshly grated Parmesan
Cress (for garnish)

Preparation steps

Cook the pasta in boiling salted water until al dente.

Clean the mushrooms, wipe with a paper towel and cut into slices or strips. Peel the garlic and the shallots, chop finely, and sweat in a hot pan with oil until translucent. Add the mushrooms and cook until they have released their liquid and it has evaporated. Season with salt and pepper, then add the pasta. Add the parsley and parmesan, and toss everything thoroughly to combine. Serve on warmed plates garnished with the watercress.
