Pancetta Wrapped Asparagus
Peel bottom third of asparagus and cook stalks in a pot of boiling salted water about 10 minutes until al dente, drain, rinse with cold water and drain again. Wrap 3-4 asparagus stalks together with 1-2 slices of pancetta and repeat the process until all asparagus and pancetta is used. Heat oil in a pan and fry wrapped asparagus for 5 minutes until golden brown and season lightly with salt and pepper. Deglaze the pan with lemon juice and a little water.
Arrange wrapped asparagus on plates and serve sprinkled with Parmesan.
