Scrub the potatoes and cook until tender, about 20 minutes. Allow to cool and cut into wedges. Rinse the apples, cut into quarters, remove cores and cut into wedges. Peel shallots and cut into wedges.

Cook sausages in a pan in oil until golden brown, 2-3 minutes. Add potatoes, shallots and apple slices and cook together about 6-8 minutes, stirring occasionally.

Mix in mustard and season with salt and pepper. Serve hot.
