- 3 Oranges
- 2 Tbsps lemon juice
- 1 Tbsp honey
- 3 Tbsps Carob (vegetable binder) (from a health food store)
- 2 Figs
- 1 sprig Lemon balm
Preparation

Peel 1 orange with a sharp knife carefully, making sure to remove the bitter white pith, and cut into small pieces. Squeeze the juice of the remaining oranges. Puree the orange pieces with half of the orange juice.

Add the remaining orange juice, lemon juice and honey to orange puree and add enough water to equal 1/2 liter (approximately 2 cups). Stir in the bean gum. Chill in refrigerator for 30 minutes. until soup is cold and thickens slightly.

To serve, rinse the figs, pat dry and cut crosswise into slices. Pour the cold soup into bowls, top with the figs and garnish with a little lemon.
